Easy Camping Crumpet Eggs
Want to make a delicious breakfast that the whole brood will enjoy, but don't want to spend hours slaving away? This is a great option!
We use this recipe frequently and we never get sick of them!
Camping Crumpet Eggs
What you will need:
2 x Crumpets for each person
2 x Eggs for each person
Butter or Margarine
Salt & Pepper
Your choice of other toppings or spreads
Using a small glass (or other round object), place upside down on top of crumpet on a flat surface. Make sure you place it in the middle of the crumpet leaving 1-2 cm gap around the whole diameter of the crumpet. Using the glass, turn left to right continuously until you have made a hole in the centre of the crumpet. Lift the glass and set the centre of the crumpet to the side. Continue this until you have made holes in all of the crumpets. Or if you feel confident enough you can just cut a circle out with a sharp knife.
Heat 1 tablespoon of butter in a pan or on a flat plate of your Weber/BBQ. Place the crumpet in the butter facing upwards.
Crack 1 egg into the centre of the crumpet where you have made the hole.
Cook until the egg has started to become white. Using an egg flip, gently lift the crumpet and turn over, to cook upside down. Allow to cook for around 1 min, or until the yolk is to your desire.
Repeat this with all of the crumpets and eggs.
Melt another tablespoon of butter and place the centre of the crumpet upside down and cook until lightly browned. Turn over and repeat until all crumpet centres are done.
Season with salt and pepper, and top with your favourite spreads or toppings.
